Leo recipe

Being the most flamboyant and extravagant of the fire signs, you
probably enjoy eating well and entertaining guests.

The following recipe is simple but effective and bound to impress at
any dinner party.
Crepes Suzette
Serves 4-6

12 thin crepes or pancakes (if made
in advance cover with greaseproof
paper to prevent drying out)
25g (1oz) butter
50g (1¾oz) caster sugar
2 oranges (prepared as grated rind,
juice and segments)
45ml (3tbsp) orange liqueur (Grand
Marnier, Cointreau, or similar)
45ml (3tbsp) brandy
  1. Melt the butter in a frying pan and add the sugar,
    orange rind and juice.
  2. Heat gently until the sugar has dissolved.
  3. Dip each crepe/pancake into the orange sauce until
    well covered and fold in half, then again into quarters.
  4. Place on a shallow warmed serving dish and garnish
    with orange segments.
  5. Add the orange liqueur and brandy to the orange
    sauce remaining in the pan and heat gently, but do not
    boil. Pour over the crepes/pancakes and ignite.
  6. Once the flame dies down serve immediately.
