Gemini recipe

physically and mentally.

This pasta recipe helps to boost energy levels as well as being quick
and easy to prepare, making it a very good choice.
Tomato Pasta
Serves 4

15ml (1tbsp) oil
1 onion, chopped
1 clove garlic, chopped
400g (14oz) can chopped tomatoes
115g (4oz) sun-dried tomatoes,
chopped
90ml (3½fl oz) red wine (optional)
350g (12oz) tagliatelle (fresh or dried)
Salt and pepper
Grated parmesan
  1. Heat the oil in a pan, gently fry the onion and garlic for
    5 minutes until soft.
  2. Add the tomatoes, sun-dried tomatoes and wine and
    cook gently for 15 mins & season to taste.
  3. Meanwhile cook the tagliatelle as per the packet
    instructions.
  4. Drain well and toss with half the sauce.
  5. Serve on individual plates with the remaining sauce on
    top and sprinkle with grated parmesan cheese.
